Christmas Gift 3 : Basic Biscotti Recipe

Christmas Gift 3 is another Christmas Gift by Courtesy of Terry Rodman. It's a basic biscotti recipe that you can easily change the taste and look by coating with a layer of caramel, add chocolate chips, cranberries, raisins or other dried fruits or nuts.



Ingredients

  • 2 cups all purpose flour
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 4 tsp. butter
  • 1 cup sugar
  • 2 large eggs
  • 1/2 tsp. vanilla extract

Instructions

  1.  Preheat oven to 350* use middle oven rack
  2. Oil cookie sheet and cover bottom of pan with parchment paper
  3. Mix or sift the flour, baking powder and salt together and set aside.
  4. Beat together until smooth the butter and sugar when smooth add the eggs, vanilla or whatever flavor of extract you like and mix together.
  5. Stir in: nuts, zest's, cocoa or other flavorings and mix real good.
  6. Turn out onto floured surface and divide into two halves.
  7. Shape on cookie sheet to look like loafs about 3 inches apart.
  8. Bake for 35 minutes or light golden brown or starting to crack. This is alright.
  9. Take out of oven and lower temp of oven to 325*.
  10. Cool on cookie sheet for 10 minutes.
  11. Place on cutting board and slice into desired sized slices. Slice on an angle to look nice so the ends are more pointed.
  12. Place the slices back on the cookie sheet and bake for another 7 to 10 minutes.
  13. Take out, turn over and bake the other side.
  14. Cool on wire rack until completely cool.
  15. Store in zip lock bag, cookie can or tight sealing jar.




Flora : To me, Biscotti looks just so ordinary and well, ain't they used in salads? But then, this is a basic recipe and so you can easily change by coating them with caramel or adding other ingredients like chocolate chips, cranberries or other dried fruits and nuts (refer to Terry's Instructions above step no. 5 : Stir in: nuts, zest's, cocoa or other flavoringsto make it your very own biscotti gift.
